White rum is preferred over darker types for its clarity of color. Served over ice and topped off with soda water, mojitos are ideal thirst-quenchers for summer parties. Cook Mode (Keep screen awake) Ingredients 8 mint leaves, plus sprig for serving ½ ounce Quick Simple Syrup Ice cubes 2 ounces light rum 1 ounce fresh lime juice Soda water, for serving Directions In the bottom of a highball or Collins glass, muddle mint leaves with simple syrup for a few seconds until mint starts to break down. Fill glass with ice, then add rum and lime juice; stir to combine. Top with soda water and garnish with mint sprig.
