Making roasted potatoes is easy and the end result is delicious. They take just a few minutes to prep, and you need only three ingredients for this classic side dish—small red potatoes, olive oil, and fresh thyme. The oven does the work, leaving you free to prep other elements of the meal as they cook. Preheating the baking sheet before adding the potatoes is our trick for making sure they are super crispy and totally tender. The combination of crispy roasted exterior and tender, fluffy interior is hard to resist.

Use different herbs in place of the thyme. Our roasted potatoes recipe also works well with other hardy herbs such as rosemary or oregano.

Ingredients

  • 1 pound small red potatoes, halved

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon chopped fresh thyme

  • Coarse salt and freshly ground pepper

Directions

  1. Preheat oven and baking sheet:

    Preheat oven to 450°F. Place a rimmed baking sheet on rack in oven.

  2. Toss potatoes with oil and thyme:

    Combine potatoes, olive oil, and thyme in a large bowl. Season with salt and pepper and toss until well combined.

  3. Roast:

    Remove heated baking sheet from oven and transfer potatoes to baking sheet, cut sides down. Roast until browned and tender, 45 to 60 minutes.
